Ingredients
- 3 cups frozen mixed berries (strawberries, blueberries, raspberries, blackberries)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a medium saucepan, combine frozen berries, sugar, cornstarch, lemon juice, vanilla, and salt. Stir to coat berries.
- Place over medium heat and cook, stirring frequently, until mixture comes to a boil and thickens, about 10-12 minutes.
- Reduce heat to low and simmer for 2-3 minutes, stirring constantly, until filling is glossy and very thick.
- Remove from heat and let cool completely before using. Filling will continue to thicken as it cools.
Tips
- Cool filling completely before using in pastries to prevent soggy crusts.
- Store leftover filling in an airtight container in the refrigerator for up to 1 week.
- Substitute with fresh berries in season; reduce sugar to 1/3 cup if berries are very sweet.
