Ingredients
2 pints cherry tomatoes
1/2 cup extra-virgin olive oil
4 cloves garlic, smashed
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (8-ounce) block feta cheese
12 ounces pasta (such as penne or fusilli)
1/4 cup fresh basil leaves, torn
2 tablespoons pine nuts (optional)
Instructions
Preheat oven to 400°F (200°C).
In a 9x13-inch baking dish, combine cherry tomatoes, olive oil, garlic, red pepper flakes, salt, and pepper. Toss to coat.
Place the block of feta in the center of the tomato mixture. Bake for 30-35 minutes, until tomatoes are bursting and feta is soft.
While the feta bakes, cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
Remove baking dish from oven. Add hot pasta, basil, and pine nuts (if using) to the dish. Toss well, mashing tomatoes and feta to create a creamy sauce. Add reserved pasta water a little at a time if needed to loosen the sauce.
Serve immediately, garnished with extra basil if desired.
Tips
For a vegetarian version, omit pine nuts or substitute walnuts.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water.
This sauce also works well with gluten-free pasta.
