1 tablespoon unsalted butter
1 shallot, finely chopped
1 clove garlic, minced
10 oz fresh spinach
1/4 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon black pepper
1/8 teaspoon ground nutmeg
4 large eggs
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C). Butter two small ramekins or a small baking dish.
In a large skillet, melt butter over medium heat. Add shallot and cook until softened, about 2 minutes. Add garlic and cook 30 seconds.
Add spinach in batches, stirring until wilted. Cook until all liquid evaporates, about 3 minutes.
Stir in cream, salt, pepper, and nutmeg. Cook until slightly thickened, about 1 minute. Remove from heat.
Divide spinach mixture evenly between ramekins. Make a small well in the center of each.
Crack 2 eggs into each well. Sprinkle Parmesan cheese over the top.
Bake for 12-15 minutes until egg whites are set but yolks are still runny. Let cool 2 minutes before serving.
