Ingredients
1 lb (450g) chicken breast tenders
1/2 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
2 tablespoons olive oil or cooking spray
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil and lightly grease with cooking spray.
In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper. In another bowl, place beaten eggs. In a third bowl, mix panko breadcrumbs and Parmesan cheese.
Pat chicken tenders dry with paper towels. Dredge each tender in the flour mixture, shaking off excess. Dip into eggs, then coat with panko mixture, pressing gently to adhere.
Place coated tenders on the prepared baking sheet. Drizzle or spray lightly with olive oil for extra crispiness.
Bake for 10 minutes, then flip tenders and bake for another 8-10 minutes, until golden brown and internal temperature reaches 165°F (74°C).
Serve immediately with your favorite dipping sauce.
Tips
For extra crunch, use a wire rack on the baking sheet to allow air circulation.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to restore crispiness.
Try adding cayenne pepper or chili powder for a spicy kick.
