Ingredients
4 chicken leg quarters (about 2 lbs total)
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
In a small bowl, mix olive oil, minced garlic, thyme, rosemary, paprika, salt, and pepper to form a paste.
Pat chicken leg quarters dry with paper towels. Rub the spice paste all over the chicken, including under the skin.
Place chicken skin-side up on the prepared baking sheet, spacing them apart.
Bake for 40-45 minutes, until skin is golden brown and crispy, and internal temperature reaches 165°F (74°C) at the thickest part.
Let rest for 5 minutes before serving.
Tips
For extra crispy skin, broil for 2-3 minutes at the end of baking.
