Ingredients
4 large apples (e.g., Granny Smith, Honeycrisp, or Fuji)
1/4 cup brown sugar
1/4 cup rolled oats
1/4 cup chopped walnuts or pecans
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons unsalted butter, softened
1/2 cup water or apple cider
Instructions
Preheat oven to 375°F (190°C).
Wash and core apples, leaving the bottom intact to hold the filling. Use an apple corer or a small knife to remove the core, creating a cavity about 1 inch wide.
In a small bowl, mix together brown sugar, oats, nuts, cinnamon, nutmeg, and softened butter until crumbly.
Stuff the filling into each apple cavity, pressing gently to pack.
Place apples in a baking dish just large enough to hold them. Pour water or apple cider into the bottom of the dish (not over the apples).
Bake for 40-45 minutes, until apples are tender when pierced with a fork. Serve warm with juices from the pan.
