Ingredients
1 lb ground beef (80/20)
Salt and black pepper to taste
8 slices bacon
4 slices American cheese
2 sesame seed burger buns
2 tablespoons mayonnaise
2 tablespoons ketchup
4 slices tomato
4 leaves lettuce
Instructions
Divide ground beef into 4 equal portions and shape into thin patties slightly larger than the buns. Season both sides with salt and pepper.
Cook bacon in a skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels; drain excess fat, leaving 1 tablespoon in the pan.
Increase heat to medium-high. Cook patties in the bacon fat for 3-4 minutes per side for medium doneness. In the last minute, top each patty with a slice of cheese and cover to melt.
Toast buns in the skillet or oven until lightly golden.
Spread mayonnaise on the bottom bun and ketchup on the top bun.
Assemble: bottom bun, lettuce, 2 tomato slices, one cheese-topped patty, 4 bacon slices, second cheese-topped patty, top bun. Repeat for second burger.
Serve immediately.
Tips
For extra crispiness, cook bacon in the oven at 400°F for 15-20 minutes.
If you prefer a thicker patty, use 6 oz per patty and adjust cooking time.
Store leftover cooked patties and bacon separately in the fridge for up to 3 days.
