Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon sugar
1/2 teaspoon salt
1/4 cup cold unsalted butter, cubed
3/4 cup cold buttermilk
8 slices bacon
4 large eggs
4 slices cheddar cheese
Salt and black pepper to taste

Instructions
Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, sugar, and salt. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Add buttermilk and stir just until dough comes together. Turn onto a floured surface and gently knead 4-5 times. Pat dough to 1/2-inch thickness and cut out 4 biscuits using a 3-inch round cutter. Place on prepared baking sheet.
Bake biscuits for 12-14 minutes until golden brown. Transfer to a wire rack to cool slightly.
While biscuits bake, cook bacon in a large skillet over medium heat until crispy, about 8 minutes. Transfer to paper towels to drain. Pour off all but 1 tablespoon of bacon fat from skillet.
In the same skillet, fry eggs in the reserved bacon fat (or butter) over medium heat until whites are set but yolks are still runny, about 3 minutes. Season with salt and pepper.
Split each biscuit in half. Place a slice of cheese on the bottom half, then a fried egg, then 2 slices of bacon. Top with biscuit top. Serve immediately.
Tips
For extra flavor, add a drizzle of hot sauce or maple syrup.
If you prefer a firmer yolk, cook eggs 1-2 minutes longer.
Biscuits can be made ahead and reheated in a 350°F oven for 5 minutes.
