Instructions

  1. In a large bowl, combine flour, yeast, and salt. Add warm water and olive oil; mix until dough forms. Knead on a floured surface for 5 minutes until smooth. Cover and let rest 10 minutes.
  2. Meanwhile, cook bacon in a skillet over medium heat until crisp. Remove bacon and drain on paper towels. Discard all but 1 tablespoon drippings.
  3. In the same skillet, melt butter with reserved drippings. Add onions and sugar; cook over medium-low heat, stirring occasionally, until golden and caramelized, about 15 minutes. Set aside.
  4. Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside.
  5. Divide dough in half. On a floured surface, roll each half into a 12-inch circle. Transfer to parchment paper.
  6. Top each crust evenly with mozzarella, caramelized onions, bacon, Parmesan, and oregano.
  7. Slide pizzas (on parchment) onto hot stone or baking sheet. Bake 10-12 minutes until crust is golden and cheese bubbly.
  8. Let cool 2 minutes, slice, and serve.
