Ingredients
2 1/4 cups all-purpose flour
1 teaspoon instant yeast
1 teaspoon salt
1 cup warm water
1 tablespoon olive oil
6 slices bacon, chopped
2 large onions, thinly sliced
1 tablespoon butter
1/2 teaspoon sugar
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
Instructions
In a large bowl, combine flour, yeast, and salt. Add warm water and olive oil; mix until dough forms. Knead on a floured surface for 5 minutes until smooth. Cover and let rest 10 minutes.
Meanwhile, cook bacon in a skillet over medium heat until crisp. Remove bacon and drain on paper towels. Discard all but 1 tablespoon drippings.
In the same skillet, melt butter with reserved drippings. Add onions and sugar; cook over medium-low heat, stirring occasionally, until golden and caramelized, about 15 minutes. Set aside.
Preheat oven to 500°F (260°C) with a pizza stone or inverted baking sheet inside.
Divide dough in half. On a floured surface, roll each half into a 12-inch circle. Transfer to parchment paper.
Top each crust evenly with mozzarella, caramelized onions, bacon, Parmesan, and oregano.
Slide pizzas (on parchment) onto hot stone or baking sheet. Bake 10-12 minutes until crust is golden and cheese bubbly.
Let cool 2 minutes, slice, and serve.
Tips
For extra crispiness, par-bake the crust for 3 minutes before adding toppings.
Serve with a sprinkle of red pepper flakes for heat.
Leftover pizza can be reheated in a skillet for a crispy bottom.
