Ingredients
2 cups whole milk
3 tablespoons fine semolina (sooji)
3 tablespoons date paste (or 4-5 pitted dates blended with 2 tbsp water)
1/4 teaspoon cardamom powder
1 teaspoon ghee or unsalted butter
Instructions
In a heavy-bottomed pan, heat ghee over medium heat. Add semolina and roast for 2 minutes, stirring constantly, until fragrant and lightly golden.
Add milk slowly while whisking to prevent lumps. Bring to a gentle boil, then reduce heat to low.
Add date paste and cardamom powder. Stir well and cook for 5-7 minutes, stirring frequently, until the mixture thickens to a pudding-like consistency.
Remove from heat and let cool slightly. Serve warm or chilled, as desired.
Tips
For a smoother texture, blend the cooked pudding in a mixer after cooling.
