Ingredients
16 asparagus spears, trimmed
8 slices prosciutto, halved lengthwise
2 tablespoons olive oil
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Trim the woody ends from the asparagus spears. If spears are thick, peel the lower third with a vegetable peeler.
Lay a half slice of prosciutto on a work surface. Place one asparagus spear at one end and roll up tightly, leaving the tip exposed. Repeat with remaining prosciutto and asparagus.
Arrange the wraps seam-side down on the prepared baking sheet. Brush lightly with olive oil and sprinkle with black pepper.
Bake for 10-12 minutes, until prosciutto is crispy and asparagus is tender. If desired, sprinkle with Parmesan cheese during the last 2 minutes of baking.
Serve warm or at room temperature.
Tips
For a dairy-free version, omit the Parmesan cheese.
These wraps can be assembled a few hours ahead and refrigerated until ready to bake.
