This classic Cuban-style fried rice is a quick and flavorful dish made with leftover rice, ham, and vegetables, perfect for a satisfying weeknight meal.

Ingredients
3 cups cooked white rice, preferably day-old
2 tablespoons vegetable oil
1/2 cup diced ham
1/2 cup frozen peas and carrots, thawed
2 green onions, sliced
2 large eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Heat vegetable oil in a large skillet or wok over medium-high heat.
Add diced ham and cook for 2 minutes until lightly browned.
Add peas and carrots and green onions; cook for 1 minute.
Push vegetables to one side of the pan and pour beaten eggs into the empty side. Scramble until just set, then mix with vegetables.
Add cold rice to the pan, breaking up any clumps. Stir-fry for 3-4 minutes until heated through.
Drizzle soy sauce over rice and sprinkle with garlic powder. Stir to combine evenly.
Season with salt and pepper to taste. Serve hot.
