Ingredients
1 cup long-grain white rice
1 cup fresh or frozen corn kernels
2 tablespoons vegetable oil
1/4 cup finely chopped onion
2 cloves garlic, minced
1/4 cup diced red bell pepper
1 3/4 cups chicken or vegetable broth
1/2 teaspoon salt
1/4 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
Instructions
Rinse the rice under cold water until the water runs clear; drain well.
Heat oil in a medium saucepan over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic and bell pepper; cook 1 minute more.
Stir in the rice and corn; cook, stirring, for 2 minutes until rice is lightly toasted.
Add broth, salt, and cumin; bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes until liquid is absorbed and rice is tender.
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and stir in cilantro.
