Ingredients
2 cups all-purpose flour
1 teaspoon salt
1/2 cup warm water
1/4 cup olive oil
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/2 cup chopped fresh dill
1/2 cup chopped fresh mint
2 green onions, finely chopped
1/2 teaspoon black pepper
1/2 teaspoon paprika
Instructions
In a large bowl, mix flour and salt. Add warm water and olive oil; stir until a dough forms. Knead on a floured surface for 5 minutes until smooth. Cover and rest for 20 minutes.
In a small bowl, combine cilantro, parsley, dill, mint, green onions, black pepper, and paprika. Set aside.
Divide dough into 8 equal pieces. Roll each piece into a thin circle (about 8 inches in diameter).
Spread a generous tablespoon of herb mixture over each circle, leaving a small border. Roll up tightly, then coil into a spiral. Flatten slightly with your hand.
Heat a dry skillet or griddle over medium-high heat. Cook each lavash for 2-3 minutes per side until golden brown spots appear.
Serve warm or at room temperature.
Tips
For extra flavor, brush lavash with melted butter after cooking.
