Ingredients
4 boneless, skinless chicken breasts (about 6 oz each) or 4 pork chops (about 6 oz each)
1/2 cup apricot preserves
2 tablespoons soy sauce
1 tablespoon Dijon mustard
1 clove garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 tablespoon fresh rosemary or thyme leaves (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with foil or parchment paper.
In a small bowl, whisk together apricot preserves, soy sauce, Dijon mustard, and minced garlic until smooth.
Season chicken or pork with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the meat for 2-3 minutes per side until golden brown.
Brush half of the apricot glaze over the top of each piece of meat. Sprinkle with fresh herbs if using.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until internal temperature reaches 165°F (74°C) for chicken or 145°F (63°C) for pork.
Remove from oven and brush with remaining glaze. Let rest for 5 minutes before serving.
Tips
For extra caramelization, broil for 1-2 minutes after glazing.
Serve with rice or roasted vegetables to soak up the glaze.
