Ingredients
1 1/2 cups unsweetened applesauce
1/2 cup vegetable oil
1 cup granulated sugar
1/2 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 cup raisins or chopped walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
In a large bowl, whisk together applesauce, oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
In a separate bowl, sift together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
Add dry ingredients to wet ingredients and stir until just combined. Fold in raisins or walnuts if using.
Pour batter into prepared pan and smooth the top.
Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.
