  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a skillet over medium heat, melt butter. Add diced apples, sugar, cinnamon, nutmeg, and lemon juice. Cook, stirring occasionally, until apples are tender and juices thicken, about 8 minutes. Sprinkle flour over apples and stir until mixture thickens. Remove from heat and let cool completely.
  3. On a lightly floured surface, unfold puff pastry sheets. Cut each sheet into 3 equal rectangles (about 4x6 inches each).
  4. Place about 2 tablespoons of apple filling in the center of each rectangle. Fold pastry over to form a triangle. Press edges with a fork to seal. Place turnovers on prepared baking sheet.
  5. Brush tops with beaten egg and sprinkle with coarse sugar. Cut a small slit in the top of each turnover to vent steam.
  6. Bake for 18-22 minutes, until golden brown and puffed. Cool on a wire rack for at least 10 minutes before serving.
