Ingredients
4 firm but ripe Bosc or Anjou pears, peeled, stems intact
2 cups apple cider or unsweetened apple juice
1/2 cup granulated sugar
1 cinnamon stick
4 whole cloves
1 star anise
1 strip lemon peel (about 2 inches)
Instructions
In a medium saucepan, combine apple cider, sugar, cinnamon stick, cloves, star anise, and lemon peel. Bring to a boil over medium-high heat, stirring to dissolve sugar.
Reduce heat to low. Carefully add pears to the liquid, laying them on their sides. If needed, add enough water to just cover pears.
Place a round of parchment paper directly on the surface of the liquid to keep pears submerged. Simmer gently for 20-30 minutes, turning pears occasionally, until tender when pierced with a knife.
Using a slotted spoon, transfer pears to a serving dish. Remove and discard spices and lemon peel from poaching liquid.
Bring poaching liquid to a boil over high heat and cook until reduced by half, about 5-7 minutes, to make a syrup.
Drizzle syrup over pears. Serve warm or at room temperature.

For a dairy-free option, serve with coconut whipped cream.
Store leftover pears and syrup in an airtight container in the refrigerator for up to 3 days.
The poaching liquid can be reused for another batch of pears or as a base for cocktails.
