Ingredients
1 ½ cups all-purpose flour
¼ cup granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
⅔ cup milk
2 large eggs
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 cups peeled and diced apples (about 2 medium apples)
Vegetable oil for frying
1 cup powdered sugar
2 tablespoons milk (for glaze)
Instructions
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, whisk together milk, eggs, melted butter, and vanilla.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples.
Heat about 2 inches of oil in a deep pot to 350°F (175°C).
Drop batter by heaping tablespoonfuls (about 2 tablespoons each) into the hot oil, frying in batches without crowding.
Fry for 2-3 minutes per side, until golden brown and cooked through. Drain on paper towels.
For the glaze, whisk together powdered sugar and milk until smooth.
Drizzle glaze over warm fritters and serve.
Tips
Use a mix of tart and sweet apples like Granny Smith and Honeycrisp for best flavor.
Keep oil temperature steady; too hot will burn the outside before the inside is cooked.
These are best enjoyed fresh, but can be reheated in a 350°F oven for 5 minutes.
