Ingredients
2 cups rolled oats
1 cup all-purpose flour
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, melted
1 large egg
1 teaspoon vanilla extract
2 medium apples, peeled, cored, and diced (about 2 cups)
1/4 cup chopped walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
In a large bowl, combine oats, flour, brown sugar, cinnamon, baking soda, and salt.
In a separate bowl, whisk together melted butter, egg, and vanilla.
Pour wet ingredients into dry ingredients and stir until just combined. Fold in diced apples and walnuts.
Transfer mixture to prepared pan and press evenly into an even layer.
Bake for 25-30 minutes, until golden brown and a toothpick inserted in center comes out clean.
Cool completely in pan on a wire rack, then cut into 12 bars.
