  3. In a small saucepan, melt butter and golden syrup over low heat. In a separate small bowl, dissolve baking soda in boiling water, then stir into butter mixture (it will foam).
  4. Pour butter mixture into dry ingredients and stir until well combined.
  5. Roll tablespoonfuls of mixture into balls and place on prepared trays, leaving space for spreading. Flatten slightly with a fork.
  6. Bake for 10-12 minutes until golden brown. Cool on trays for 5 minutes, then transfer to a wire rack to cool completely.
