Ingredients
3 large eggs
2 tablespoons whole milk
1 tablespoon unsalted butter
1/8 teaspoon salt
1 pinch black pepper
Instructions
Crack eggs into a bowl, add milk, salt, and pepper. Whisk until well combined and slightly frothy.
Melt butter in a nonstick skillet over medium-low heat. Swirl to coat the pan.
Pour egg mixture into the skillet. Let set for about 30 seconds, then use a rubber spatula to gently push the cooked eggs from the edges toward the center.
Continue cooking, stirring occasionally, until eggs are soft and creamy with no visible liquid egg remaining. Remove from heat just before they look fully set (they will continue to cook).
Serve immediately.
Tips
For extra creamy eggs, substitute milk with heavy cream or crème fraîche.
Do not overcook; eggs should be soft and slightly moist.
Season just before serving to prevent eggs from weeping.
