Ingredients
- 8 small russet potatoes (about 4 oz each)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded sharp cheddar cheese
- 6 slices bacon, cooked and crumbled
- 3 green onions, thinly sliced
- 1/2 cup sour cream
- 2 tablespoons chopped fresh chives
Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes and prick with a fork. Bake directly on oven rack for 50-60 minutes until tender. Let cool slightly.
- Cut each potato in half lengthwise. Scoop out flesh, leaving about 1/4-inch thick shell. Reserve flesh for another use.
- Brush both sides of potato skins with olive oil; season with salt and pepper. Place skins cut-side up on a baking sheet.
- Bake at 400°F for 10 minutes. Flip and bake another 10 minutes until crisp.
- Sprinkle cheese and bacon inside skins. Return to oven for 2-3 minutes until cheese melts.
- Top with green onions. Serve with sour cream and chives.

- For extra crispiness, bake skins an additional 5 minutes after flipping.
- Leftover potato flesh can be used for mashed potatoes or potato soup.
