Ingredients
1 1/2 pounds ground beef (80/20)
1/2 pound ground pork
1 cup plain breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 large eggs, lightly beaten
2 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup ketchup
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Instructions
Preheat oven to 350°F (175°C). Line a rimmed baking sheet with foil or parchment paper.
In a small bowl, combine breadcrumbs and milk; let sit for 5 minutes until absorbed.
In a large bowl, mix together ground beef, ground pork, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, and pepper until just combined. Do not overmix.
Shape the mixture into a loaf shape on the prepared baking sheet, about 9x5 inches.
In a small bowl, whisk together ketchup, brown sugar, and apple cider vinegar for the glaze. Spread half of the glaze over the meatloaf.
Bake for 45 minutes. Spread remaining glaze over the top and bake for another 15 minutes, or until internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing and serving.
Tips
Let the meatloaf rest before slicing to keep it from falling apart.
Leftovers make great sandwiches.
To make ahead, assemble the loaf and refrigerate up to 24 hours before baking.
