  1. Wash cucumbers and trim off the blossom end. Cut into spears or leave whole if small.
  2. In a non-reactive saucepan, combine water, vinegar, salt, and sugar. Bring to a boil, stirring to dissolve salt and sugar. Remove from heat and let cool slightly.
  3. Place garlic, dill seeds, fresh dill, and red pepper flakes (if using) into a clean quart jar. Pack cucumbers tightly into the jar.
  4. Pour the hot brine over the cucumbers, covering them completely. Leave 1/2 inch headspace. Tap jar to release air bubbles.
  5. Seal with lid and let cool to room temperature. Refrigerate for at least 24 hours before eating for best flavor. Pickles will keep for up to 3 months refrigerated.
