Ingredients
- 1 bunch amaranth greens (about 8 oz), stems removed and leaves chopped
- 2 tablespoons vegetable oil
- 4 cloves garlic, thinly sliced
- 1 teaspoon cumin seeds
- 1/2 teaspoon red chili flakes (optional)
- Salt to taste
Instructions
- Wash the amaranth leaves thoroughly and drain well. Chop coarsely.
- Heat oil in a large skillet or wok over medium-high heat. Add cumin seeds and let them sizzle for about 10 seconds.
- Add sliced garlic and chili flakes (if using). Sauté until garlic is lightly golden, about 30 seconds.
- Add the chopped amaranth leaves. Stir-fry for 2-3 minutes until leaves wilt.
- Reduce heat to low, cover, and cook for 5-7 minutes until tender, stirring occasionally.
- Uncover, increase heat to high, and cook for 1-2 minutes to evaporate excess moisture. Season with salt and serve hot.
Tips
- Do not overcook; greens should be tender but still vibrant.
- Serve as a side with rice and dal or with flatbreads.
- For extra flavor, add a squeeze of lemon juice before serving.
