Ingredients
4 medium potatoes (about 500g), boiled and mashed
1/2 cup green peas, boiled and mashed
1/2 cup finely chopped onion
2 green chilies, finely chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon cumin seeds
1/2 teaspoon garam masala
1/2 teaspoon chaat masala
1/2 teaspoon red chili powder
1/2 teaspoon amchur (dry mango powder)
1/2 cup bread crumbs
2 tablespoons cornflour
Salt to taste
Oil for shallow frying
Instructions
In a large bowl, combine mashed potatoes, mashed peas, onion, green chilies, ginger-garlic paste, cumin seeds, garam masala, chaat masala, red chili powder, amchur, and salt. Mix well.
Add bread crumbs and cornflour to the mixture and mix until it comes together. If the mixture is too dry, sprinkle a little water; if too wet, add more bread crumbs.
Divide the mixture into 8 equal portions and shape each into a smooth ball, then flatten into a patty about 1/2-inch thick.
Heat oil in a non-stick pan over medium heat. Place the patties in the pan, ensuring not to overcrowd. Shallow fry for 3-4 minutes on each side until golden brown and crispy.
Remove and drain on paper towels. Serve hot with mint chutney and tamarind chutney.
Tips
For extra crispiness, coat the patties in a thin layer of cornflour before frying.
You can add boiled and mashed cauliflower for a variation.
Serve immediately for best texture; reheating may make them less crispy.
