Ingredients
4 (6 oz) fish fillets (such as cod, tilapia, or salmon) or 4 boneless skinless chicken breasts (about 6 oz each)
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup finely ground almonds (almond meal)
1/2 cup panko breadcrumbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon paprika
3 tablespoons olive oil or vegetable oil, for frying
Instructions
Pat fish or chicken dry with paper towels. Season lightly with salt and pepper.
Set up a breading station: Place flour in a shallow dish. Beat eggs in another shallow dish. In a third dish, combine ground almonds, panko, 1/2 teaspoon salt, 1/4 teaspoon pepper, garlic powder, and paprika.
Dredge each piece in flour, shaking off excess. Dip in egg, letting excess drip off. Press into almond mixture, coating all sides.
Heat oil in a large nonstick skillet over medium-high heat. Cook fish or chicken in batches, without crowding, until golden brown and cooked through: fish about 3-4 minutes per side, chicken about 5-6 minutes per side (internal temp 165°F).
Transfer to a paper towel-lined plate. Serve immediately.
