Ingredients
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1 cup unsalted butter, cubed
1/2 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups whole raw almonds
1/2 teaspoon baking soda
Instructions
Line a baking sheet with parchment paper or a silicone mat. Set aside.
In a large, heavy-bottomed saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring occasionally, until sugar dissolves and mixture comes to a boil.
Add butter and salt, stirring constantly until butter melts. Continue cooking, stirring frequently, until mixture reaches 300°F (hard crack stage) on a candy thermometer, about 10-15 minutes.
Remove from heat. Quickly stir in vanilla extract and almonds until well coated.
Immediately stir in baking soda (mixture will foam up). Pour onto prepared baking sheet and spread into an even layer using a greased spatula.
Let cool completely at room temperature, about 30 minutes. Once set, break into pieces.

For chocolate-dipped brittle, melt 1 cup chocolate chips and dip half of each piece.
Use a candy thermometer for accuracy; if you don't have one, test by dropping a bit of mixture into cold water—it should form hard, brittle threads.
