Ingredients
200g spaghetti
4 tablespoons extra-virgin olive oil
4 cloves garlic, thinly sliced
1/2 teaspoon red pepper flakes
1/4 cup fresh parsley, chopped
Salt, to taste
1/2 cup reserved pasta water
Instructions
Bring a large pot of salted water to a boil. Cook spaghetti until al dente, reserving 1/2 cup pasta water before draining.
While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until golden, about 2 minutes, stirring frequently.
Stir in red pepper flakes and cook for 30 seconds.
Add drained spaghetti to the skillet. Toss to coat, adding reserved pasta water a little at a time to create a light sauce. Season with salt.
Remove from heat, toss with parsley, and serve immediately.
Tips
For extra flavor, use a good quality extra-virgin olive oil.
