Ingredients
1 lb chicken thighs, bone-in
1 lb pork belly, cut into 2-inch pieces
1/2 cup soy sauce
1/2 cup white vinegar
1 cup water
6 cloves garlic, crushed
2 bay leaves
1 teaspoon whole black peppercorns
2 tablespoons cooking oil
Instructions
In a bowl, combine soy sauce, vinegar, water, garlic, bay leaves, and peppercorns. Add chicken and pork. Marinate for at least 30 minutes.
Heat oil in a pot over medium heat. Remove meat from marinade (reserve marinade) and sear until browned on all sides.
Pour reserved marinade into the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes, stirring occasionally, until meat is tender and sauce has thickened slightly.
Season with salt if needed. Serve hot over steamed rice.
Tips
For a richer flavor, marinate overnight.
Do not stir the pot after adding vinegar until it boils to avoid a bitter taste.
