Ingredients
1 kg pork belly, cut into 2-inch cubes
1/2 cup soy sauce
1/2 cup white vinegar
1 cup water
6 cloves garlic, crushed
2 bay leaves
1 teaspoon whole black peppercorns
2 tablespoons cooking oil
Salt to taste
Instructions
In a bowl, combine pork, soy sauce, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes.
Heat oil in a pot over medium heat. Remove pork from marinade (reserve marinade) and sear until lightly browned.
Pour in reserved marinade and water. Bring to a boil, then reduce heat to low. Cover and simmer for 30 minutes.
Add vinegar. Do not stir. Simmer uncovered for 10 minutes.
Season with salt if needed. Continue simmering until sauce thickens and pork is tender, about 10 more minutes.
Serve hot over steamed rice.
