Instructions

  1. Wash the raw mangoes. In a large pot, add the mangoes and 4 cups water. Bring to a boil, then reduce heat and simmer until mangoes are soft and skin starts to peel off, about 15-20 minutes.
  2. Remove mangoes from water and let cool. Peel off the skin and separate the pulp from the seed. Discard the seed and skin.
  3. In a blender, combine the mango pulp, sugar, 1/2 cup water, roasted cumin powder, black salt, regular salt, black pepper, and mint (if using). Blend until smooth.
  4. Pour the mixture into a saucepan and bring to a gentle boil, stirring constantly. Simmer for 2-3 minutes until sugar is fully dissolved and syrup thickens slightly.
  5. Remove from heat and let cool completely. Store in a sterilized glass bottle or jar. Refrigerate for up to 2 weeks.
  6. To serve, mix 2-3 tablespoons of syrup with 1 cup chilled water or sparkling water. Add ice cubes and garnish with mint leaves if desired.
