Ingredients
1 1/2 cups unsalted butter, softened
3 cups granulated sugar
5 large eggs, room temperature
3 cups all-purpose flour
2 tablespoons lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
3/4 cup 7UP soda (or similar lemon-lime soda)
Instructions
Preheat oven to 325°F (165°C). Grease and flour a 10-inch bundt pan.
In a large bowl, cream butter and sugar together until light and fluffy, about 5 minutes.
Add eggs one at a time, beating well after each addition.
In a separate bowl, whisk together flour and lemon zest. Gradually add to butter mixture, alternating with 7UP, beginning and ending with flour. Mix until just combined.
Stir in lemon juice and vanilla extract.
Pour batter into prepared pan and smooth the top.
Bake for 65-75 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 15 minutes, then turn out onto a wire rack to cool completely.
Optional: dust with powdered sugar or drizzle with a simple lemon glaze before serving.
