Ingredients
- 4 boneless, skinless chicken thighs (about 1 lb)
- 1 cup buttermilk
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 4 burger buns
- 4 slices cheddar cheese
- 4 lettuce leaves
- 1/2 cup mayonnaise
- 2 tbsp hot sauce (e.g., Tabasco)
- 1 tsp lemon juice
- Oil for deep frying
Instructions
- Pound chicken thighs to even thickness. Mix buttermilk, salt, pepper, paprika, and cayenne. Marinate chicken in mixture for at least 30 minutes.
- In a shallow dish, combine flour, cornstarch, garlic powder, and onion powder. Dredge each chicken piece in flour mixture, pressing firmly to coat.
- Heat oil in a deep fryer or large pot to 350°F (175°C). Fry chicken in batches for 6-8 minutes until golden and cooked through. Drain on paper towels.
- Mix mayonnaise, hot sauce, and lemon juice to make spicy mayo. Toast burger buns lightly.
- Assemble burgers: spread spicy mayo on bottom bun, add lettuce, fried chicken, cheese slice, and top bun. Serve immediately.
Tips
- For extra crunch, double-dip chicken in buttermilk and flour mixture.
- Adjust cayenne and hot sauce to your spice preference.
- Serve with fries and extra spicy mayo on the side.
