4 boneless, skinless chicken thighs

1/2 cup cornstarch
1 teaspoon baking powder
4 burger buns
4 leaves iceberg lettuce
4 slices tomato
1/2 cup mayonnaise
2 tablespoons hot sauce

Instructions
Pound chicken thighs to even thickness. Mix buttermilk, salt, pepper, paprika, garlic powder, and cayenne. Marinate chicken in buttermilk mixture for at least 30 minutes.
In a shallow dish, combine flour, cornstarch, baking powder, and a pinch of salt and pepper. Remove chicken from marinade, letting excess drip off, and dredge in flour mixture, pressing to adhere.
Heat oil in a deep skillet to 350°F (175°C). Fry chicken in batches for 5-6 minutes per side until golden and cooked through. Drain on paper towels.
Mix mayonnaise with hot sauce to make spicy mayo. Toast burger buns lightly.
Assemble burgers: spread spicy mayo on bottom bun, add lettuce, tomato, chicken fillet, and top bun. Serve immediately.
