Ingredients
1 ripe cantaloupe or honeydew melon, or 8 fresh figs
8 slices prosciutto (about 4 oz)
Fresh mint leaves for garnish (optional)
Balsamic glaze for drizzling (optional)
Instructions
Cut the melon in half, remove seeds, and slice into 8 wedges. Remove the rind from each wedge. If using figs, cut each fig in half lengthwise.
Place a slice of prosciutto on a clean work surface. If using melon, place a melon wedge at one end of the prosciutto slice. If using figs, place two fig halves cut-side down on the prosciutto.
Roll the prosciutto around the fruit, tucking in the ends to secure.
Arrange the wrapped fruit on a serving platter. Garnish with fresh mint leaves and drizzle with balsamic glaze if desired. Serve immediately.
Tips
Use ripe but firm fruit to prevent it from becoming mushy.
For a variation, substitute prosciutto with serrano ham or speck.
