Ingredients
1 cup whole wheat flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup plain yogurt
2 tablespoons olive oil, divided
1/4 cup pizza sauce
1/2 cup shredded mozzarella cheese
1/4 cup sliced bell peppers
1/4 cup sliced mushrooms
1/4 cup sliced black olives
1/4 cup chopped red onion
1/2 teaspoon dried oregano
Instructions
In a bowl, mix whole wheat flour, baking powder, and salt. Add yogurt and 1 tablespoon olive oil; stir until a dough forms. Knead gently on a floured surface for 1 minute. Divide dough into 2 balls.
Place one dough ball on a piece of parchment paper; press into an 8-inch round. Repeat with second ball.
Heat a non-stick skillet over medium heat. Add 1/2 tablespoon olive oil. Slide one dough round into the skillet (with parchment side up, then peel off parchment). Cook for 3-4 minutes until bottom is golden and bubbles appear.
Flip the crust. Spread 2 tablespoons pizza sauce over the cooked side, then top with half the cheese, half the veggies, and a sprinkle of oregano. Cover the skillet and cook for 5-7 minutes until cheese melts and bottom is golden.
Repeat with the second pizza. Slice and serve hot.
Tips
For a crispier crust, cook without cover for the last 2 minutes.
Customize with your favorite veggies or add cooked chicken for extra protein.
Leftover pizza can be reheated in a skillet or oven.
