Ingredients
2 tablespoons unsalted butter
1 tablespoon olive oil
3 cloves garlic, minced
1/2 cup dry white wine (such as Pinot Grigio or Sauvignon Blanc)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
2 tablespoons chopped fresh parsley (optional)
Instructions
Heat butter and olive oil in a large skillet over medium heat until butter is melted.
Add minced garlic and cook, stirring, for about 30 seconds until fragrant (do not brown).
Pour in the white wine and bring to a simmer. Cook for 2-3 minutes, until slightly reduced.
Reduce heat to low and stir in the heavy cream. Simmer gently for 2-3 minutes, stirring occasionally.
Add the Parmesan cheese, salt, and pepper. Stir until cheese is melted and sauce is smooth.
Taste and adjust seasoning if needed. If using parsley, stir it in just before serving.
Toss with cooked pasta immediately. If sauce thickens too much, thin with a splash of pasta water.
Tips
For a lighter version, substitute half-and-half for heavy cream, but note the sauce will be thinner.
