Ingredients
4 cups peeled and diced watermelon rind (white part only)
1 cup granulated sugar
1/2 cup apple cider vinegar
1/4 cup water
1 teaspoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon celery seeds
1/4 teaspoon ground turmeric
1/4 teaspoon red pepper flakes
1 small onion, finely chopped
1 red bell pepper, finely chopped
Instructions
Place diced watermelon rind in a large bowl and sprinkle with salt. Cover with cold water and let sit for 1 hour. Drain and rinse well.
In a large non-reactive pot, combine sugar, vinegar, water, mustard seeds, celery seeds, turmeric, and red pepper flakes. Bring to a boil over medium-high heat, stirring until sugar dissolves.
Add the drained rind, onion, and bell pepper to the pot. Reduce heat to low and simmer, stirring occasionally, for 40-45 minutes until the rind is translucent and the liquid is syrupy.
Remove from heat and let cool slightly. Transfer to sterilized jars or an airtight container. Refrigerate for at least 2 hours before serving to allow flavors to meld.
Tips
Store in the refrigerator for up to 2 weeks.
Serve with grilled chicken, pork, or on a cheese platter.
For a spicier relish, add an extra 1/4 teaspoon red pepper flakes.
