Ingredients
2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs
1 3/4 cups milk
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
Butter for serving
Pure maple syrup for serving
Instructions
Preheat your waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, beat the eggs, then add milk, melted butter, and vanilla extract; whisk until combined.
Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix; a few lumps are okay.
Lightly grease the waffle iron with cooking spray or a little oil.
Pour about 1/2 to 3/4 cup of batter onto the center of the hot waffle iron (amount depends on your iron). Close the lid and cook until golden and crisp, about 3-5 minutes.
Repeat with remaining batter. Serve immediately with a pat of butter and a generous drizzle of warm maple syrup.
Tips
For extra crispy waffles, let the batter rest for 5 minutes before cooking.
Keep cooked waffles warm on a wire rack in a 200°F oven while making the rest.
Leftover waffles can be frozen and reheated in a toaster.
