Ingredients
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
1 large egg
3 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 cup mixed fresh berries (strawberries, blueberries, raspberries)
1 cup plain Greek yogurt
2 tablespoons honey or maple syrup (optional)
Instructions
Preheat waffle iron according to manufacturer's instructions.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until just combined (batter may be slightly lumpy).
Lightly grease the waffle iron with nonstick spray or a little melted butter.
Pour about 1/2 cup of batter onto the center of the waffle iron and close the lid. Cook until golden brown and crisp, about 3-5 minutes.
Repeat with remaining batter to make 4 waffles.
Top each waffle with a generous spoonful of Greek yogurt and a handful of fresh berries. Drizzle with honey or maple syrup if desired. Serve immediately.
Tips
For extra crispiness, keep waffles warm on a wire rack in a 200°F oven while cooking the rest.
Substitute frozen berries (thawed and drained) if fresh are unavailable.
Store leftover waffles in an airtight container in the refrigerator for up to 2 days; reheat in a toaster or oven.
