Ingredients
2 frozen waffles (or homemade)
1 ripe avocado
2 large eggs
1 tablespoon olive oil

Instructions
Toast the waffles according to package directions until golden and crispy. Set aside.
While waffles toast, halve the avocado, remove the pit, and scoop the flesh into a bowl. Mash with a fork to desired consistency. Season with salt, pepper, and a squeeze of lemon juice if using.
Heat olive oil in a non-stick skillet over medium heat. Crack eggs into the pan and cook to your liking (sunny-side up or over-easy, about 3-4 minutes). Season with salt and pepper.
Spread mashed avocado evenly over each waffle. Top each with a cooked egg. Sprinkle with red pepper flakes if desired. Serve immediately.
