1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg
3/4 cup milk
2 tablespoons unsalted butter, melted
4 large eggs
2 tablespoons milk
Salt and pepper to taste
1 tablespoon butter
1/2 cup shredded cheddar cheese
4 slices cooked bacon, crumbled

Instructions
Preheat waffle iron. In a bowl, whisk flour, sugar, baking powder, and salt. In another bowl, whisk egg, 3/4 cup milk, and melted butter. Pour wet into dry and stir until just combined.
Cook waffle batter in waffle iron according to manufacturer's instructions until golden and crisp. Keep warm.
In a small bowl, beat 4 eggs with 2 tablespoons milk, salt, and pepper. Melt 1 tablespoon butter in a nonstick skillet over medium heat. Pour in eggs and scramble until just set.
Place one waffle on a plate. Spoon half the scrambled eggs down the center of the waffle. Top with half the cheese and half the bacon.
Fold the waffle over the filling like a taco or roll it up tightly. Repeat with remaining ingredients.
Serve immediately with salsa and sour cream.
