Ingredients
- 2 tablespoons unsalted butter
- 3 large leeks, white and light green parts only, thinly sliced
- 1 medium onion, chopped
- 3 cups chicken or vegetable broth
- 2 medium potatoes, peeled and diced
- 1 cup heavy cream
- Salt and white pepper to taste
- 1/4 cup chopped fresh chives for garnish
Instructions
- In a large pot, melt butter over medium heat. Add leeks and onion; cook, stirring occasionally, until softened but not browned, about 10 minutes.
- Add broth and potatoes; bring to a boil. Reduce heat, cover, and simmer until potatoes are tender, about 20 minutes.
- Remove from heat and let cool slightly. Puree the soup in a blender until smooth (in batches if necessary).
- Stir in heavy cream; season with salt and white pepper. Refrigerate until well chilled, at least 3 hours or overnight.
- Serve cold, garnished with chopped chives.

- For a lighter version, substitute half-and-half for heavy cream.
