Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup rolled oats
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped red bell pepper
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg, lightly beaten
- 2 tablespoons olive oil
- 4 whole wheat burger buns
- Lettuce, tomato, onion, and condiments for serving
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but with some chunks.
- Add oats, onion, bell pepper, garlic, tomato paste, cumin, paprika, salt, pepper, and egg. Mix until well combined.
- Divide the mixture into 4 equal portions and shape into patties about 3/4 inch thick.
- Heat olive oil in a large nonstick skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and heated through.
- Toast the buns if desired. Serve patties on buns with lettuce, tomato, onion, and condiments.
Tips
- For a vegan version, substitute the egg with 1 tablespoon ground flaxseed mixed with 3 tablespoons water.
- Patties can be baked at 375°F for 15-20 minutes, flipping halfway, instead of pan-frying.
- Store uncooked patties in the fridge for up to 2 days or freeze for up to 3 months.
