Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
1 medium zucchini, diced
1 medium yellow bell pepper, diced
8 ounces cremini mushrooms, sliced
3 cups fresh spinach
1 (24-ounce) jar marinara sauce
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
9 no-boil lasagna noodles
2 cups shredded mozzarella cheese
1 cup ricotta cheese
1/4 cup grated Parmesan cheese
Instructions
Preheat oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute.
Add zucchini, bell pepper, and mushrooms. Cook until vegetables are tender, about 8 minutes. Add spinach and cook until wilted, about 2 minutes.
Stir in marinara sauce, oregano, salt, and pepper. Simmer for 5 minutes.
Spread a thin layer of the vegetable sauce on the bottom of a 9x13-inch baking dish.
Layer 3 lasagna noodles over the sauce. Spread 1/3 of the remaining sauce over noodles, then dot with 1/3 of the ricotta cheese and sprinkle with 1/3 of the mozzarella.
