  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent, about 5 minutes. Add garlic and cook for 1 minute.
  3. Add zucchini, bell pepper, and mushrooms. Cook until vegetables are tender, about 8 minutes. Add spinach and cook until wilted, about 2 minutes.
  4. Stir in marinara sauce, oregano, salt, and pepper. Simmer for 5 minutes.
  5. Spread a thin layer of the vegetable sauce on the bottom of a 9x13-inch baking dish.
  6. Layer 3 lasagna noodles over the sauce. Spread 1/3 of the remaining sauce over noodles, then dot with 1/3 of the ricotta cheese and sprinkle with 1/3 of the mozzarella.
  7. Repeat layers twice more: noodles, sauce, ricotta, mozzarella.
  8. Top with remaining mozzarella and sprinkle with Parmesan cheese.
  9. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
  10. Let rest for 10 minutes before serving.
