Ingredients
2 1/2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
3/4 cup unsalted butter, softened
1 3/4 cups granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1 1/4 cups whole milk, room temperature
1 cup unsalted butter, softened (for frosting)
4 cups powdered sugar
2 tsp vanilla extract (for frosting)
2-3 tbsp heavy cream (for frosting)
Instructions
Preheat oven to 350°F. Grease and flour three 8-inch round cake pans.
Whisk flour, baking powder, and salt together in a bowl.
In a large bowl, beat 3/4 cup butter and sugar until light and fluffy, about 3 minutes.
Add eggs one at a time, beating well after each. Mix in 2 tsp vanilla.
Alternately add flour mixture and milk, beginning and ending with flour, mixing just until combined.
Divide batter evenly among pans. Bake 22-25 minutes until toothpick comes out clean. Cool in pans 10 minutes, then turn out onto wire racks to cool completely.
For frosting: Beat 1 cup butter until creamy. Gradually add powdered sugar, beating on low. Add 2 tsp vanilla and 2 tbsp cream; beat on high until fluffy, adding more cream if needed.
Place one cake layer on serving plate. Spread about 1 cup frosting on top. Repeat with second layer. Top with third layer. Frost top and sides with remaining frosting.

For best results, ensure all ingredients are at room temperature.
To make ahead, wrap cooled cake layers in plastic wrap and freeze for up to 2 months.
Store frosted cake in the refrigerator; let stand at room temperature 30 minutes before serving.
