Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
In a large bowl, beat butter, granulated sugar, brown sugar, eggs, and vanilla extract until creamy.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to butter mixture, mixing until combined. Stir in chocolate chips.
Drop dough by rounded tablespoons onto prepared baking sheets, about 2 inches apart. Bake for 9-11 minutes or until golden brown. Cool on baking sheets for 2 minutes, then transfer to wire racks to cool completely.
Once cookies are cool, place one cookie flat side up. Scoop about 1/2 cup of slightly softened vanilla ice cream onto the cookie. Top with another cookie, flat side down, and gently press to spread ice cream to edges. Smooth the edges with a spatula if needed.
Place sandwiches on a baking sheet and freeze for at least 1 hour until firm. Wrap individually in plastic wrap and store in freezer.
Tips
For easier assembly, freeze the cookies for 15 minutes before making sandwiches.
Let sandwiches sit at room temperature for 2-3 minutes before serving for easier eating.
