Ingredients
1/2 cup unsalted butter, melted
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 cup all-purpose flour
1/4 teaspoon salt
1 pint vanilla ice cream
Instructions
In a medium bowl, whisk together melted butter, sugar, egg, and vanilla extract until smooth.
Add flour and salt; whisk until batter is smooth and free of lumps.
Heat a waffle cone maker according to manufacturer's instructions. Lightly grease with nonstick spray if needed.
Pour about 2 tablespoons of batter onto the center of the waffle cone maker. Close lid and cook until golden brown, about 1-2 minutes.
Immediately remove the hot waffle and roll it into a cone shape using a cone roller or by hand (careful, it's hot). Hold for a few seconds until it holds its shape. Place on a wire rack to cool completely.
Repeat with remaining batter, greasing the iron as needed.
Once cones are cool, fill each with a scoop of vanilla ice cream. Serve immediately.
Tips
If you don't have a cone roller, you can shape the cone by hand using a folded kitchen towel to protect your fingers.
Store unfilled cones in an airtight container at room temperature for up to 3 days.
For extra flavor, add a pinch of cinnamon or nutmeg to the batter.
